My Top 3 Winter Warmer Recipes
Winter is here and it’s time to swap the summer salads for warming, nourishing dishes. I often get people asking me where to find the best vegan recipes, and the truth is that I spend a lot of time sifting through the web of the internet finding recipes I love. There’s a lot of trial and error, but I always keep my favourites and bookmark them for next time! For those of you wanting to swing into that frosty spirit, here are 3 of my favourite winter warmers:
1. One Pot Everyday Lentil Soup
This recipe is the perfect winter warmer. Even better is that it’s all made in one pot, so saves the washing up! I like to make this soup in bulk on Sundays and freeze it into portions to eat over the week. Everyone should have a recipe like this for when they don’t want to cook but want to eat something nourishing and warm. All you need is 10 staple ingredients, one pot and about 30 minutes to cook!
2. Roast Cauliflower and Quinoa Bowl
This recipe is one I stumbled upon recently and have made it about 3 times since! It’s quick to make and super healthy too. You’ll need to check out the recipe, but in short all it involves is roasting some cauliflower in the oven, cooking some quinoa and combining them in a big bowl. I love to add in whatever roast veggies I have in the fridge, as well as a can of chickpeas (roasted in the oven) to add a bit of extra protein and crunch! If you’ve got a herb garden, add a generous serve of fresh parsley and mint – delicious!
3. Sweet Potato and Black Bean Veggie Burgers
These burgers are a bit more time consuming than the above 2 recipes, but let me tell you it is worth the wait! And it’s hardly a wait really – they take about 40 minutes all up. I’ve been on a mission the last few years to find the best homemade vegan burger patties, and these are one of my favourites. They are delicious not only as traditional burgers, but the patties are great on their own with guacamole or crumbled up in a salad.
