My Top 5 Lazy Vegan Meals

Do you often find yourself thinking that you should cook more often, but making the excuse you don’t have enough time? Don’t worry, you are not alone on this one. Time is one of the most precious (and least available) things that I value. Whilst going plant-based in one of the best things you can do for yourself, it is also something that generally requires more time in terms of meal prep, to ensure you’re getting all the correct nutrients. 

In saying this, sometimes we are just tired and lazy, and don’t feel like slaving away in the kitchen for an entire evening. Some nights I get home from meetings or shows and am absolutely starving - the last thing on my mind is whipping up a feast for dinner! On nights like this a fast, easy meal is exactly what we need. 

One of my top tips for successfully maintaining a vegan diet is to come up with a short list of quick and easy meals that you know you will love. Here are 5 of my favourite meals for when I simply cannot be bothered cooking, but still want to fuel my body with something nutritious and delicious.

Crunchy Thai Peanut & Quinoa Salad

This is a recipe that tastes like heaven and is incredibly satiating, yet it is full of vibrant colours and nutrients. The only cooking requirement is the quinoa, but besides from that, the other ingredients can be chopped and thrown together in about 10 minutes. 


Glowing Spiced Lentil Soup

This soup is so quick and easy because there aren’t many vegetables to chop (just garlic and onion—that’s it!) and it relies mostly on pantry staples. It takes 15 minutes to prep (including reading the recipe), and then it’s hands off while it cooks. Talk about easy! 


20 Minute Vegan Pesto Pasta

For me, pasta is the perfect dish for sharing. It is such an easy dish, built for families and friends to come together for a hearty, filling meal. This pesto pasta is packed full of raw nutrition and healthy fats. It’s a good one to prep in the morning, but can also be made after work when your motivation levels are lagging. It’s basic and easy to put together, but oh so satisfying – sometimes, that’s just what you need!


Easy Burrito Bowl 

Veggie bowls allow you to eat the rainbow, and eat it quickly! This bowl takes about 10 minutes to throw together, and I guarantee it tastes 10x better than your local Guzman. There is something incredibly satiating about a burrito bowl. If you’re famished, swap out the bowl and make a wrap instead. This is an easy and delicious go-t, and can be on your table in less time than it takes to drive to your nearest Mexican joint!

When it comes to quick, throw-together meals, a trusty stir-fry is hands down the winner. This recipe can be whipped together out of whatever veggies you need to use up in your fridge, and the Happy Pear manage to pull it together in under 5 minutes!
